Netko je jednom rekao da brujeta ima koliko i Dalmatinaca. ‘Ajde, malo je pretjerao, ali nije ni daleko od istine. Brujet, kultno jelo koje Dalmacija obožava i svojata, može se pripremiti na mali milijun način‘, ali sve se svodi na dvije osnovne metode: brujet na hladno ili na toplo. Ili ga vi možda zovete brudet? Zovite ga kako vam drago, samo ga što češće kuhajte. Samo, na koji način...?

Kada se brujet kuha na toplo, najprije je potrebno dobro šufigat‘ kapulu pa joj kad je uhvatila boju treba dodati pome da bi riba došla kao šećer na kraju. Sve se, jasno, zalije vinom i vodom ili samo vodom, a neki vole dodati i malo kvasine ili prošeka (evo nas opet na zaključku da je recepata za ovo jelo koliko vas volja).

Kad se, pak, brujet kuha na hladno, svi se sastojci poredaju u teću pa se kuhaju na laganoj vatri.

Za koju god se metodu odlučili, jelo se za vrijeme kuhanja nipošto ne smije miješati, zbog čega je potrebno s vremena na vrijeme protresti teću.

Ne zaboravite u brujet pored ribe ubaciti - naravno, ako vam je pri ruci - i koju školjku, škampa ili kojeg drugog morskog stanovnika, a za okus čuda možete učiniti i ako u teću dodate i morski kamen dobro obrastao algama.

Kada se brujet kuha na toplo, najprije je potrebno dobro šufigat‘ kapulu pa joj kad je uhvatila boju treba dodati pome da bi riba došla kao šećer na kraju. Sve se, jasno, zalije vinom i vodom ili samo vodom, a neki vole dodati i malo kvasine ili prošeka (evo nas opet na zaključku da je recepata za ovo jelo koliko vas volja).

Kad se, pak, brujet kuha na hladno, svi se sastojci poredaju u teću pa se kuhaju na laganoj vatri.

Za koju god se metodu odlučili, jelo se za vrijeme kuhanja nipošto ne smije miješati, zbog čega je potrebno s vremena na vrijeme protresti teću.

Ne zaboravite u brujet pored ribe ubaciti - naravno, ako vam je pri ruci - i koju školjku, škampa ili kojeg drugog morskog stanovnika, a za okus čuda možete učiniti i ako u teću dodate i morski kamen dobro obrastao algama.

Netko je jednom rekao da brujeta ima koliko i Dalmatinaca. ‘Ajde, malo je pretjerao, ali nije ni daleko od istine. Brujet, kultno jelo koje Dalmacija obožava i svojata, može se pripremiti na mali milijun način‘, ali sve se svodi na dvije osnovne metode: brujet na hladno ili na toplo.
