Ako vam kojim slučajem nije poznato o čemu je riječ, uputit ćemo vas - radi se o jelu od dizanog tijesta koje se peče u tavi.
Omiljeno je diljem Balkana, s tim da ga svaka od njegovih nacija voli svojatati, no istina je da je jako teško reći tko se uopće prvi sjetio početi ga peći. Bez obzira na to koji točno recept koristili, jer određene razlike postoje, kako između regija, tako i unutar njih - ponekad čak i unutar istih obitelji - sastojci su isti: brašno, voda, kvasac. Njima se često pridružuju jaje i jogurt, koji tijestu daje pahuljastiju teksturu, ponekad i alkohol, najčešće rakija, kako bi tijesto upilo manje ulja. Upravo se u jogurtu i rakiji krije tajna najboljeg uspjeha pa čak i ako vaš recept ne sadrži te sastojke, pokušajte pronaći način da ih u njega uključite.

I princip je manje više isti, s dvije osnovne varijacije; ako je tijesto gušće, tada se nakon dizanja razvalja, izreže na komade i baca u vrelo ulje, a ako je rjeđe, u tom se slučaju vadi kacijolom izravno u ulje ili još bolje u mješavinu ulja i masti.
Čim tijesto uhvati lijepu boju ide van iz tave, malo se ocijedi a zatim slijedi najbolji dio: u slatkoj se varijanti posipa šećerom, u slanoj se spaja sa sirom, kajmakom, pršutom ili nekom drugom delicijom.

500 g brašna
180 ml jogurta
100 ml mlakog mlijeka
1 vrećica kvasca
2 žličice rakije
1 žličica soli
1 žličica šećera
ulje za prženje
Priprema:
Pomiješajte kvasac, mlijeko i šećer, pustite da se smjesa digne pa je dodajte u brašno s preostalim sastojcima.
Umijesite tijesto i pustite ga da naraste, a zatim kidajte komadiće i pržite ih u vrućem ulju ili tijesto prebacite na pobrašnjenu površinu, razvaljajte, režite komade po želji i pržite ih u ulju.
Pržene uštipke ocijedite te ih poslužite s prilozima po želji, slanim ili slatkim.

Volite li uštipke? A volite li poderane gaće? Jesu li vam dragi langoši? Jeste li ikad kušali mekike? Dovoljno je da ste na jedno od ovih pitanja odgovorili potvrdno jer vrijedit će za sve, s obzirom na to da se svi spomenuti nazivi odnose na isto. Ako vam kojim slučajem nije poznato o čemu je riječ, uputit ćemo vas - radi se o jelu od dizanog tijesta koje se peče u tavi.
Omiljeno je diljem Balkana, s tim da ga svaka od njegovih nacija voli svojatati, no istina je da je jako teško reći tko se uopće prvi sjetio početi ga peći. Moguće je također i da nam je prvi recept pristigao iz nekih drugih krajeva. Sve to zapravo uoopće nije važno ako ih ne znate dobro pripremiti.

Bez obzira na to koji točno recept koristili, jer određene razlike postoje, kako između regija, tako i unutar njih - ponekad čak i unutar istih obitelji - sastojci su isti: brašno, voda, kvasac. Njima se često pridružuju jaje i jogurt, koji tijestu daje pahuljastiju teksturu, ponekad i alkohol, najčešće rakija, kako bi tijesto upilo manje ulja. Upravo se u jogurtu i rakiji krije tajna najboljeg uspjeha pa čak i ako vaš recept ne sadrži te sastojke, pokušajte pronaći način da ih u njega uključite.

I princip je manje više isti, s dvije osnovne varijacije; ako je tijesto gušće, tada se nakon dizanja razvalja, izreže na komade i baca u vrelo ulje, a ako je rjeđe, u tom se slučaju vadi kacijolom izravno u ulje ili još bolje u mješavinu ulja i masti.
Čim tijesto uhvati lijepu boju ide van iz tave, malo se ocijedi a zatim slijedi najbolji dio: u slatkoj se varijanti posipa šećerom, u slanoj se spaja sa sirom, kajmakom, pršutom ili nekom drugom delicijom.
Uštipci
Sastojci:
500 g brašna
180 ml jogurta
100 ml mlakog mlijeka
1 vrećica kvasca
2 žličice rakije
1 žličica soli
1 žličica šećera
ulje za prženje
Priprema:
Pomiješajte kvasac, mlijeko i šećer, pustite da se smjesa digne pa je dodajte u brašno s preostalim sastojcima.
Umijesite tijesto i pustite ga da naraste, a zatim kidajte komadiće i pržite ih u vrućem ulju ili tijesto prebacite na pobrašnjenu površinu, razvaljajte, režite komade po želji i pržite ih u ulju.
Pržene uštipke ocijedite te ih poslužite s prilozima po želji, slanim ili slatkim.
