Od kad su cijene namirnica poletjele u nebo, na jako su nam dragi recepti za jela u kojima se mogu iskoristiti namirnice koje smo donedavno ignorirali jer su dosadne, tvrde, neugledne, žilave, bljutave... uglavnom, razumijete što želimo reći. Govedina je, premda može biti delikatesa, godinama bila u sjeni junetine i teletine, no kako je nešto cjenovno povoljnija, osobito kad je riječ o određenim kategorijama mesa, sada ponovno postaje zanimljiva.

Zato vam nudimo recept idealan za pripremu govedine, koja premda je ekonomičnija od junetine ima jedan veliki minus - često nas iznenadi žilavošću. Za pripremu ovoga jela, osobito popularnog u Srednjoj Americi, trebat će vam govedina od rebara, puno finih toplih začina i riža ili kukuruzne tortillje za prilog.

Ono što vam preostane u narednim danima možete iskoristiti kao nadjev za enchilade ili složence s tjesteninom ili krumpirom, a dobro se slaže i s tjesteninom.

Carne Guisada

Sastojci:

1,5 - 2 kg goveđih rebara bez kostiju
500 g krumpira
250 g rajčica
2 glavice luka
8 režnjeva češnjaka
1 paprika babura
1 zelena paprika
1-2 čili papričice
5 žlica ulja
1 lovorov list
1 žlica paste od rajčica
1½ žličica mljevenog kumina
1 žličica mljevenog korijandera
1/2 žličice mljevenog klinčića
1 grančica korijandera ili peršina
sol, papar 

Priprema:

Narežite meso na komade i zapržite ga kratko sa svih strana na dvije zagrijane žlice ulja. Dodajte pola usitnjene glavice luka, 4 zgnječena češnjaka i sol. Prelijte vodom tek toliko da prekrije meso. Zakuhajte pa smanjite vatru oko tri sata, dok meso nije jako mekano.

Procijedite, sačuvajte meso, a povrće bacite. Tekućinu sačuvajte.

Nasjeckajte preostali luk i češnjak pa ih ubacite u lonaca na zagrijano ulje. Kratko promiješajte pa dodajte grubo usitnjene rajčice, nasjeckane paprike. Posolite pa kuhajte na laganoj vatri uz miješanje dok povrće ne omekša, 20-ak minuta, zatim dodajte pastu od rajčice i začine pa kuhajte još par minuta. 

U loncac zatim dodajte meso, krumpir narezan na kockice, lovorov list i oko pola litre tekućine u kojoj se kuhalo meso (možete staviti i više). Kuhajte uz povremeno podlijevanje dok se meso ne počne raspadati. Ne volite li raskuhan krumpir, možete ga skuhati odvojeno pa dodati par minuta prije kraja kuhanja.

Poslužite posuto nasjeckanim korijandrom ili peršinom uz rižu kao prilog ili samostalno.

Od kad su cijene namirnica poletjele u nebo, na jako su nam dragi recepti za jela u kojima se mogu iskoristiti namirnice koje smo donedavno ignorirali jer su dosadne, tvrde, neugledne, žilave, bljutave... uglavnom, razumijete što želimo reći. Govedina je, premda može biti delikatesa, godinama bila u sjeni junetine i teletine, no kako je nešto cjenovno povoljnija, osobito kad je riječ o određenim kategorijama mesa, sada ponovno postaje zanimljiva.

Zato vam nudimo recept idealan za pripremu govedine, koja premda je ekonomičnija od junetine ima jedan veliki minus - često nas iznenadi žilavošću. Za pripremu ovoga jela, osobito popularnog u Srednjoj Americi, trebat će vam govedina od rebara, puno finih toplih začina i riža ili kukuruzne tortillje za prilog.

Ono što vam preostane u narednim danima možete iskoristiti kao nadjev za enchilade ili složence s tjesteninom ili krumpirom, a dobro se slaže i s tjesteninom.

Carne Guisada

Sastojci:

1,5 - 2 kg goveđih rebara bez kostiju
500 g krumpira
250 g rajčica
2 glavice luka
8 režnjeva češnjaka
1 paprika babura
1 zelena paprika
1-2 čili papričice
5 žlica ulja
1 lovorov list
1 žlica paste od rajčica
1½ žličica mljevenog kumina
1 žličica mljevenog korijandera
1/2 žličice mljevenog klinčića
1 grančica korijandera ili peršina
sol, papar 

Priprema:

Narežite meso na komade i zapržite ga kratko sa svih strana na dvije zagrijane žlice ulja. Dodajte pola usitnjene glavice luka, 4 zgnječena češnjaka i sol. Prelijte vodom tek toliko da prekrije meso. Zakuhajte pa smanjite vatru oko tri sata, dok meso nije jako mekano.

Procijedite, sačuvajte meso, a povrće bacite. Tekućinu sačuvajte.

Nasjeckajte preostali luk i češnjak pa ih ubacite u lonaca na zagrijano ulje. Kratko promiješajte pa dodajte grubo usitnjene rajčice, nasjeckane paprike. Posolite pa kuhajte na laganoj vatri uz miješanje dok povrće ne omekša, 20-ak minuta, zatim dodajte pastu od rajčice i začine pa kuhajte još par minuta. 

U loncac zatim dodajte meso, krumpir narezan na kockice, lovorov list i oko pola litre tekućine u kojoj se kuhalo meso (možete staviti i više). Kuhajte uz povremeno podlijevanje dok se meso ne počne raspadati. Ne volite li raskuhan krumpir, možete ga skuhati odvojeno pa dodati par minuta prije kraja kuhanja.

Od kad su cijene namirnica poletjele u nebo, na jako su nam dragi recepti za jela u kojima se mogu iskoristiti namirnice koje smo donedavno ignorirali jer su dosadne, tvrde, neugledne, žilave, bljutave... uglavnom, razumijete što želimo reći. Govedina je, premda može biti delikatesa, godinama bila u sjeni junetine i teletine, no kako je nešto cjenovno povoljnija, osobito kad je riječ o određenim kategorijama mesa, sada ponovno postaje zanimljiva.

Zato vam nudimo recept idealan za pripremu govedine, koja premda je ekonomičnija od junetine ima jedan veliki minus - često nas iznenadi žilavošću.
