Takvo nam je, eto, vrijeme došlo, da su društvene mreže postale svojevrstan barometar društvenih zbivanja. Više nema potrebe ni pogledati kroz prozor, ni baciti oko na TV pa ni proćakulati s prijateljima, dosta vam je malo "proskrolati" i za čas ste upućeni. Ne mislim samo na manje ili više ugodne aktualnosti, modne i druge trendove, nego i na pitanje što se kuha. U doslovnom smislu. Pa ako ste posljednjih dana pogledali što je novo na Instagramu, TikToku i Facebooku, a iskreno mi je teško zamisliti nekoga tko nije, morali ste primijetiti novu opsesiju.

Knedle. Svi ih prave. Ili ih barem jedu. Nikakvo čudo, jer najbolje su sa šljivama, a šljive su upravo sada najslađe. I moraju biti slatke jer od onih prvih, tvrdih i kiselkastih, nema koristi kad se prave knedle. Da, neki će im u šupljinu iz koje je odstranjena koštica dodati malo šećera pa će to, ‘ajde, malo popraviti stvar po pitanju slatkoće, no ništa ne može nadomjestiti okus zrelih šljiva. I tako sad kad smo konačno dočekali takve šljive, čini se da nam nema druge nego baciti se na izradu knedli.

Ali samo malo. Najprije ću vas malo izgnjaviti s par podataka o knedlama koji vam mogu i ne moraju biti zanimljivi. Ako ste nestrpljivi, samo skrolajte put dolje gdje vas čeka jedan dobar, navodno "pravi" (što god to značilo) recept za knedle.

Dakle, knedle. Čije su? Recepata za raznovrsne vrste knedli ima gdje god ima i krumpira. Ili starog kruha. Ili griza. Jer od svega se navedenog mogu napraviti okruglice, bilo slatke, bilo slane. Pa tako postoje Leberknödel od kruha i jetre, postoje knedliky koji se prave od kruha i Grießklößchen od, pogodili ste, griza, a, dakako, postoje i Germknödel od dizanog tijesta... No knedle u užem smislu, a to su one sa šljivama, uvijek su od krumpira i smatra se da su podrijetlom njemačke ili austrougarske, ovisi o tome koga pitate.

Sudeći po tome da su najpopularnije u zemljama koje su nekoć bile u sastavu Austro-Ugarske Monarhije, nekako bi se ipak reklo da ta činjenica preteže u korist druge opcije, a moguće je i da nudi odgovor na pitanje kad su izmišljene. Izvorno nazivane Zwetschkenknödel, danas se u svakoj od država koje stoje na teritoriju nekadašnjeg carstva drukčije zovu, no svi se nazivi svode na isto, a to je doslovni prijevod spomenute riječi. Jednako se tako i svi recepti svode na isto: krumpir se skuha, zgnječi, dodaju mu se brašno, jaje i masnoća (ponegdje maslac, ponegdje mast) pa se od dobivenog tijesta i prethodno očišćenih šljiva oblikuju okruglice.

Nema odstupanja ni kad je u pitanju posluživanje knedli, uvijek idu uz prepržene krušne mrvice, dok je jedina varijacija dopuštena po pitanju toga hoćete li uz njih dodati i malo vrhnja, eventualno jogurta, ili pak nećete. Hm, čini se da su knedle recept koji po pitanju odstupanja od izvornika možda čak i najbolje prkosi vremenu i prostoru...

Prije nego prijeđemo na recept, evo vam još samo nekoliko savjeta za kraj. Ne treba ni spominjati da se krumpir kuha u kori, je li tako, no prilikom izbora krumpira treba uložiti nešto truda jer trebat će vam zreli, brašnasti krumpir koji će upiti manje brašna zbog kojega tijesto može biti žilavo. Zbog istog razloga nije preporučljivo ni u strahu od grudica ili napadu lijenosti posegnuti za mikserom; krumpir je najbolje temeljito propustiti kroz ono što se nekad zvalo štrukapatata, a danas se sasvim dosadno naziva preša za krumpir. 

Prilikom oblikovanja knedli koriste se dvije tehnike, a vi odaberite što vam je zgodnije. U prvom slučaju od tijesta trebate otkidati komadiće koji vam lijepo stanu u dlan pa im na sredinu staviti šljivu i zatvoriti je tijestom, pri čemu nije zgoreg tijesto po rubu malo smočiti, kako bi se bolje držalo. U drugom slučaju tijesto se razvalja na debljinu od oko centimetra i reže na kvadrate pa se dalje postupa kao u prvom slučaju.

Knedle sa šljivama

Sastojci

180-190 g brašna (po potrebi)
16 šljiva
3 srednje velika krumpira
2 veća jaja
1/2 žličice soli

Dodatno:

3 žlice maslaca
krušne mrvice
šećer i cimet (po želji)

Priprema:

Krumpir operite pa ga skuhajte u kori. Ogulite ga i usitnite pomoću preše za krumpir ili gnječilice za pire. Dodajte krumpiru razmućena jaja i sol, a kad se smjesa ujednači dodajte i brašna koliko je potrebno za dobiti mekano tijesto.

Lagano pobrašnjenim rukama uzmite komad tijesta i stavite ga na dlan pa mu u sredinu stavite očišćenu šljivu i oko nje zatvorite tijesto u oblik okruglice. Ponavljajte dok sve ne potrošite.

U većoj, široj posudi zakuhajte posoljenu vodu. Pažljivo ubacite knedle. Kuhajte 15-20 minuta, ovisno o veličini.

Za to vrijeme otopite maslac, dodajte mu krušne mrvice pa ih uz miješanje zapržite.

Pomoću šupljikave žlice izvadite knedle u cjedilo, a zatim na pladanj za posluživanje te ih pospite mrvicama. Alternativno, iz cjedila ih stavite izravno u mrvice pa posudu pažljivo protresite kako bi se sve knedle obložile mrvicama.

Takvo nam je, eto, vrijeme došlo, da su društvene mreže postale svojevrstan barometar društvenih zbivanja. Više nema potrebe ni pogledati kroz prozor, ni baciti oko na TV pa ni proćakulati s prijateljima, dosta vam je malo "proskrolati" i za čas ste upućeni. Ne mislim samo na manje ili više ugodne aktualnosti, modne i druge trendove, nego i na pitanje što se kuha. U doslovnom smislu. Pa ako ste posljednjih dana pogledali što je novo na Instagramu, TikToku i Facebooku, a iskreno mi je teško zamisliti nekoga tko nije, morali ste primijetiti novu opsesiju.

Knedle. Svi ih prave. Ili ih barem jedu. Nikakvo čudo, jer najbolje su sa šljivama, a šljive su upravo sada najslađe. I moraju biti slatke jer od onih prvih, tvrdih i kiselkastih, nema koristi kad se prave knedle. Da, neki će im u šupljinu iz koje je odstranjena koštica dodati malo šećera pa će to, ‘ajde, malo popraviti stvar po pitanju slatkoće, no ništa ne može nadomjestiti okus zrelih šljiva. I tako sad kad smo konačno dočekali takve šljive, čini se da nam nema druge nego baciti se na izradu knedli.

Ali samo malo. Najprije ću vas malo izgnjaviti s par podataka o knedlama koji vam mogu i ne moraju biti zanimljivi. Ako ste nestrpljivi, samo skrolajte put dolje gdje vas čeka jedan dobar, navodno "pravi" (što god to značilo) recept za knedle.

Dakle, knedle. Čije su? Recepata za raznovrsne vrste knedli ima gdje god ima i krumpira. Ili starog kruha. Ili griza. Jer od svega se navedenog mogu napraviti okruglice, bilo slatke, bilo slane. Pa tako postoje Leberknödel od kruha i jetre, postoje knedliky koji se prave od kruha i Grießklößchen od, pogodili ste, griza, a, dakako, postoje i Germknödel od dizanog tijesta... No knedle u užem smislu, a to su one sa šljivama, uvijek su od krumpira i smatra se da su podrijetlom njemačke ili austrougarske, ovisi o tome koga pitate.

Sudeći po tome da su najpopularnije u zemljama koje su nekoć bile u sastavu Austro-Ugarske Monarhije, nekako bi se ipak reklo da ta činjenica preteže u korist druge opcije, a moguće je i da nudi odgovor na pitanje kad su izmišljene. Izvorno nazivane Zwetschkenknödel, danas se u svakoj od država koje stoje na teritoriju nekadašnjeg carstva drukčije zovu, no svi se nazivi svode na isto, a to je doslovni prijevod spomenute riječi. Jednako se tako i svi recepti svode na isto: krumpir se skuha, zgnječi, dodaju mu se brašno, jaje i masnoća (ponegdje maslac, ponegdje mast) pa se od dobivenog tijesta i prethodno očišćenih šljiva oblikuju okruglice.

Nema odstupanja ni kad je u pitanju posluživanje knedli, uvijek idu uz prepržene krušne mrvice, dok je jedina varijacija dopuštena po pitanju toga hoćete li uz njih dodati i malo vrhnja, eventualno jogurta, ili pak nećete. Hm, čini se da su knedle recept koji po pitanju odstupanja od izvornika možda čak i najbolje prkosi vremenu i prostoru...

Prije nego prijeđemo na recept, evo vam još samo nekoliko savjeta za kraj. Ne treba ni spominjati da se krumpir kuha u kori, je li tako, no prilikom izbora krumpira treba uložiti nešto truda jer trebat će vam zreli, brašnasti krumpir koji će upiti manje brašna zbog kojega tijesto može biti žilavo. Zbog istog razloga nije preporučljivo ni u strahu od grudica ili napadu lijenosti posegnuti za mikserom; krumpir je najbolje temeljito propustiti kroz ono što se nekad zvalo štrukapatata, a danas se sasvim dosadno naziva preša za krumpir. 

Prilikom oblikovanja knedli koriste se dvije tehnike, a vi odaberite što vam je zgodnije. U prvom slučaju od tijesta trebate otkidati komadiće koji vam lijepo stanu u dlan pa im na sredinu staviti šljivu i zatvoriti je tijestom, pri čemu nije zgoreg tijesto po rubu malo smočiti, kako bi se bolje držalo. U drugom slučaju tijesto se razvalja na debljinu od oko centimetra i reže na kvadrate pa se dalje postupa kao u prvom slučaju.

Knedle sa šljivama

Sastojci

180-190 g brašna (po potrebi)
16 šljiva
3 srednje velika krumpira
2 veća jaja
1/2 žličice soli

Dodatno:

3 žlice maslaca
krušne mrvice
šećer i cimet (po želji)

Priprema:

Krumpir operite pa ga skuhajte u kori. Ogulite ga i usitnite pomoću preše za krumpir ili gnječilice za pire. Dodajte krumpiru razmućena jaja i sol, a kad se smjesa ujednači dodajte i brašna koliko je potrebno za dobiti mekano tijesto.

Lagano pobrašnjenim rukama uzmite komad tijesta i stavite ga na dlan pa mu u sredinu stavite očišćenu šljivu i oko nje zatvorite tijesto u oblik okruglice. Ponavljajte dok sve ne potrošite.

U većoj, široj posudi zakuhajte posoljenu vodu. Pažljivo ubacite knedle. Kuhajte 15-20 minuta, ovisno o veličini.

Za to vrijeme otopite maslac, dodajte mu krušne mrvice pa ih uz miješanje zapržite.

Pomoću šupljikave žlice izvadite knedle u cjedilo, a zatim na pladanj za posluživanje te ih pospite mrvicama. Alternativno, iz cjedila ih stavite izravno u mrvice pa posudu pažljivo protresite kako bi se sve knedle obložile mrvicama.

Želite li, knedle na kraju još pospite šećerom i cimetom.
