Svinjska mast othranila je naše bake i djedove, majke i očeve. Premazanu preko "fete" mirisnog kruha, pa još s "cukrom" povrh toga, doživljavali su je kao vrhunsku poslasticu nakon cjelodnevne igre izvan kuće. Kad pričaju o djetinjstvu, kažu da im ništa što se danas nudi na policama supermarketa, čak lijepo upakirano, ne sliči tome doživljaju. Mast je bila nešto ko luksuz u doba skromnog i jednostavnog života kakvog su vodili, a poslije ostade kao neki domaći oblik literarnog "kolačića madeleine umočenog u čaj". Svi se sjećaju njenog okusa.

Mast se u svakoj kući čuvala na tamnom i hladnom mjestu da se ne pokvari, bila je kao prirodni konzervans idealan za čuvanje mesa, za Božić se redovno pojavljivala u kolačima "salenjacima", a bila je često korišten i pouzdani dio "narodne medicine", za liječenje dječjeg kašlja ili bolesnog zgloba.

A onda je odjednom stigla stigma na tu nesretnu mast i liječnici su je optužili za debljanje, visoke masnoće u krvi, začepljene žile, srčane i moždane udare i svakakve druge tegobe. Izbačena je iz kuhinje, zamijenjena biljnim uljima, trebala su desetljeća da joj se vrati dostojanstvo jer u zadnje vrijeme vratila se na velika vrata - uselila se u hrvatsku, ali i svjetsku gastronomiju.

Tako je svinjska mast, uz naravno, ekstradjevičansko maslinovo ulje, ponovo dobila status, a većina stručnjaka se slaže kako je zdravija od maslaca, a pogotovo od raznih industrijskih ulja. Koristi se za prženje, za pripremu dizanog tijesta, ustalila se na meniju restorana s probranom ponudom. Naravno, tu se ne misli na industrijski proizvedenu svinjsku mast, jako je važno čime se svinja hranila, odakle je porijeklom, a još ako se radi o crnoj - e tu već imamo gastronomski hit.

Čak je i poznati splitski poduzetnik i čokolatijer zbog nje iskočio iz svoje uobičajene sklonosti čokoladnim veganskim namazima na bazi maslinova ulja - napravio je jedinstveni dodatak kruhu sa životinjskom masti.

Oduševljenje svinjskom mašću komentirala je i splitska nutricionistica Dragana Olujić koja kaže da je ona dobila na popularnosti zahvaljujući Keto dijeti, jer se njome proširio izbor namirnica za ljude koji smanjuju težinu uz taj režim prehrane.

- Ona se vratila u modu, ali više zbog trenda vraćanja izvorne hrane na tanjure i odustajanja od industrijski proizvedenih namirnica, punih konzervansa i aditiva. Crna svinja ne proizvodi se industrijski, masovno, nego se radi o prirodnom uzgoju, ona ima puno masti i drugačiji sastav mesa, pa je zbog toga njena mast ukusnija od obične svinjske masti.

To ne znači da se svinjska mast može konzumirati u prekomjernim količinama, ne može se koristiti više puta na dnevnoj bazi, već na tjednoj. Ona nije medij u kojoj se preporučuje pečenje, ali može se dodati jedna petina svinjske masti ukupnoj količini masnoće, radi arome i dobrog okusa hrane. Prije se preporučivalo korištenje isključivo ulja da bi se smanjio unos zasićenih masnih kiselina što vodi do začepljivanja krvnih žila, no kasnije je utvrđeno da viši kolesterol uzrokuje i niz drugih razloga.

Znači, dobro je i jedno i drugo, svinjska mast i hladno prešana ulja, ali svega po malo i ničeg previše - kaže nutricionistica.

Svinjska mast othranila je naše bake i djedove, majke i očeve. Premazanu preko "fete" mirisnog kruha, pa još s "cukrom" povrh toga, doživljavali su je kao vrhunsku poslasticu nakon cjelodnevne igre izvan kuće. Kad pričaju o djetinjstvu, kažu da im ništa što se danas nudi na policama supermarketa, čak lijepo upakirano, ne sliči tome doživljaju. Mast je bila nešto ko luksuz u doba skromnog i jednostavnog života kakvog su vodili, a poslije ostade kao neki domaći oblik literarnog "kolačića madeleine umočenog u čaj". Svi se sjećaju njenog okusa.

Mast se u svakoj kući čuvala na tamnom i hladnom mjestu da se ne pokvari, bila je kao prirodni konzervans idealan za čuvanje mesa, za Božić se redovno pojavljivala u kolačima "salenjacima", a bila je često korišten i pouzdani dio "narodne medicine", za liječenje dječjeg kašlja ili bolesnog zgloba.

A onda je odjednom stigla stigma na tu nesretnu mast i liječnici su je optužili za debljanje, visoke masnoće u krvi, začepljene žile, srčane i moždane udare i svakakve druge tegobe. Izbačena je iz kuhinje, zamijenjena biljnim uljima, trebala su desetljeća da joj se vrati dostojanstvo jer u zadnje vrijeme vratila se na velika vrata - uselila se u hrvatsku, ali i svjetsku gastronomiju.

Tako je svinjska mast, uz naravno, ekstradjevičansko maslinovo ulje, ponovo dobila status, a većina stručnjaka se slaže kako je zdravija od maslaca, a pogotovo od raznih industrijskih ulja. Koristi se za prženje, za pripremu dizanog tijesta, ustalila se na meniju restorana s probranom ponudom. Naravno, tu se ne misli na industrijski proizvedenu svinjsku mast, jako je važno čime se svinja hranila, odakle je porijeklom, a još ako se radi o crnoj - e tu već imamo gastronomski hit.

Čak je i poznati splitski poduzetnik i čokolatijer zbog nje iskočio iz svoje uobičajene sklonosti čokoladnim veganskim namazima na bazi maslinova ulja - napravio je jedinstveni dodatak kruhu sa životinjskom masti.

Oduševljenje svinjskom mašću komentirala je i splitska nutricionistica Dragana Olujić koja kaže da je ona dobila na popularnosti zahvaljujući Keto dijeti, jer se njome proširio izbor namirnica za ljude koji smanjuju težinu uz taj režim prehrane.

- Ona se vratila u modu, ali više zbog trenda vraćanja izvorne hrane na tanjure i odustajanja od industrijski proizvedenih namirnica, punih konzervansa i aditiva. Crna svinja ne proizvodi se industrijski, masovno, nego se radi o prirodnom uzgoju, ona ima puno masti i drugačiji sastav mesa, pa je zbog toga njena mast ukusnija od obične svinjske masti.

To ne znači da se svinjska mast može konzumirati u prekomjernim količinama, ne može se koristiti više puta na dnevnoj bazi, već na tjednoj. Ona nije medij u kojoj se preporučuje pečenje, ali može se dodati jedna petina svinjske masti ukupnoj količini masnoće, radi arome i dobrog okusa hrane. Prije se preporučivalo korištenje isključivo ulja da bi se smanjio unos zasićenih masnih kiselina što vodi do začepljivanja krvnih žila, no kasnije je utvrđeno da viši kolesterol uzrokuje i niz drugih razloga.

Znači, dobro je i jedno i drugo, svinjska mast i hladno prešana ulja, ali svega po malo i ničeg previše - kaže nutricionistica.
