Želite li obogatiti prehranu starom sortom zgodnom za pripremu krepkih i jušnih zimskih jela, evo vam jedan zgodan prijedlog. Riječ je o mahunarki koja je na glasu kao dobar izbor za dijabetičare, a navodno je i moćan afrodizijak.

Ovom drugom svojstvu duguje i naziv, posuđen od grčkih riječi la (vrlo) i thyrios (žestok).

Ipak, nemojte da vas navedeno motivira na pretjerivajne, jer u slučaju ove grahorice to nije ni najmanje preporučljivo. Štoviše, savjetuje se umjerenost. Problem je u tome što jari grah (e, o njemu je riječ) sadrži toksičnu oksalildiaminopropionsku kiselinu, nezgodnu tvar koja može izazvati paralizu udova, oštećenja neurona te, pazite sad ovo, specifičnu atrofiju gluteusnog mišića. Ipak, nemojte ni da vas navedeno odbije od kušanja jari graha, jer spomenuti toksin se sasvim uspješno neutralizira kuhanjem. Jer da nije tako, teško da bi se ova biljka još uvijek uzgajala. A uzgaja se i to diljem Balkana, gdje je poznat pod nazivima poljak, sikirica i sjetvena kukavičica, zbog čega je neki smatraju autohtonom balkanskom biljkom.

No teško da su u pravu jer poznata je i u ostatku Europe, pri čemu je posebno popularna u Italiji, Francuskoj, Španjolskoj i Portugalu, gdje se, u gradu Alvaiázereu, održava tradicionalna višednevna fešta posvećena ovoj mahunarki, a uzgaja se i u Aziji te istočnoj Africi jer dobro podnosi sušne uvjete.

Pitate li se sad jeste li je možda već kušali ovu nadasve zanimljivu namirnicu, evo vam i kratki opis: plod je oko tri centimetra duga mahuna svinutog gornjeg ruba, a u sreddištu su joj svijetložućkaste, plosnate sjemenke specifičnog nepravilnog oblika koje su nekoga u nekom trenutku podsjetile na glavu sjekire pa je tako nastao u Dalmaciji uvriježen naziv, sikirica.

I sad što sa sikiricom? Možete je pripremati na sve načine predviđene za grah i slanutak, uz prethodno namakanje. Možete se ugledati i na Španjolce pa napraviti gachas manchegas, starinski specijalitet od brašna dobivenog mljevenjem sikirice. A možete napraviti i hranjivu gustu juhu od sikirice i krumpira. Neki u nju vole staviti suhog mesa, drugi malo manistre pa radite kako vam je drago.

Sikirica s krumpirom

Sastojci:

300 g jari graha 
100 g tjestenine 
2 manja krumpira
1 režanj češnjaka
1 mrkva
3 žlice ulja
komadić korijena celera
nekoliko manjih rajčica ili 1 žlica koncentrata
lovor, timijan, peršin, ružmarin i slično
suhomesnati proizvodi po želji
sol, papar

Priprema:

Jari grah potopite u hladnu vodu i ostavite ga da se namače 12 sati pa promijenite vodu i isperite ga. Savjetuje se potopiti ga na dodatnih 12 sati. Ako ćete koristiti suho meso poput špic rebara, namočite i njega.

Kad je namakanje gotovo, još ga jednom isplahnite. Celer, mrkvu i češnjak krupno nasjeckajte, krumpir oljuštite i narežite na kockice. Ako koristite suho meso, stavite ga kuhati.

U loncu zagrijte 3 žlice ulja pa dodajte luk, češnjak, mrkvu i celer. Pirjajte ih uz miješanje oko dvije minute pa dodajte jari grah i krumpir te kratko pirjajte uz miješanje. Dodajte rajčice ili koncentrat, kratko pirjajte uz miješanje pa zalijte s oko pola litre zagrijane povrtne juhe ili tople vode.

Dodajte lovor i ružmarin, pokrijte i kuhajte oko dva sata na vrlo laganoj vatri. Nakon dva sata probajte jesu li mahunarke mekane i kuhane. U međuvremenu dolijevajte juhe ili vode po potrebi, a možete dodati i malo vode od kuhanja suhog mesa.

Kad je gotovo potpuno skuhano ubacite sol i papar te izvadite lovor i ružmarin. Želite li kremastiju juhu, dio usitnite u blenderu pa vratite u lonac. Dodajte tjesteninu i kuhajte dok nije gotova. Pred kraj dodajte i očišćeno suho meso, ako ga koristite. ako je pregusto, razrijedite toplom vodom.

Pospite timijanom ili peršinom i poslužite.

Isprepadani informacijama o tome kako je gotovo sva hrana koja se komercijalno uzgaja zatrovana ovim ili onim kemikalijama i ustrašeni pričama o GMO hrani, mnogi se okreću namirnicama dobivenima bez korištenja pesticida i umjetnih gnojiva te starinskim sortama voća i povrća, čijim se sjemenkama nitko nije igrao u laboratoriju. Pa su nam tako ponovno omilile mišanca, oskoruše, raštika, heljda, gotovo zaboravljene podvrste jabuka i poma, a naglo smo zavoljeli i žutinicu, ošmugalj i samo dobrim poznavateljima biljnog svijeta znane samonikle delikatese.

Želite li obogatiti prehranu starom sortom zgodnom za pripremu krepkih i jušnih zimskih jela, evo vam jedan zgodan prijedlog. Riječ je o mahunarki koja je na glasu kao dobar izbor za dijabetičare, a navodno je i moćan afrodizijak.

Ovom drugom svojstvu duguje i naziv, posuđen od grčkih riječi la (vrlo) i thyrios (žestok).

Ipak, nemojte da vas navedeno motivira na pretjerivajne, jer u slučaju ove grahorice to nije ni najmanje preporučljivo. Štoviše, savjetuje se umjerenost. Ipak, nemojte ni da vas navedeno odbije od kušanja jari graha, jer spomenuti toksin se sasvim uspješno neutralizira kuhanjem. Jer da nije tako, teško da bi se ova biljka još uvijek uzgajala. A uzgaja se i to diljem Balkana, gdje je poznat pod nazivima poljak, sikirica i sjetvena kukavičica, zbog čega je neki smatraju autohtonom balkanskom biljkom.

No teško da su u pravu jer poznata je i u ostatku Europe, pri čemu je posebno popularna u Italiji, Francuskoj, Španjolskoj i Portugalu, gdje se, u gradu Alvaiázereu, održava tradicionalna višednevna fešta posvećena ovoj mahunarki, a uzgaja se i u Aziji te istočnoj Africi jer dobro podnosi sušne uvjete.

Pitate li se sad jeste li je možda već kušali ovu nadasve zanimljivu namirnicu, evo vam i kratki opis: plod je oko tri centimetra duga mahuna svinutog gornjeg ruba, a u sreddištu su joj svijetložućkaste, plosnate sjemenke specifičnog nepravilnog oblika koje su nekoga u nekom trenutku podsjetile na glavu sjekire pa je tako nastao u Dalmaciji uvriježen naziv, sikirica.

I sad što sa sikiricom? Možete je pripremati na sve načine predviđene za grah i slanutak, uz prethodno namakanje. Možete se ugledati i na Španjolce pa napraviti gachas manchegas, starinski specijalitet od brašna dobivenog mljevenjem sikirice. A možete napraviti i hranjivu gustu juhu od sikirice i krumpira. Neki u nju vole staviti suhog mesa, drugi malo manistre pa radite kako vam je drago.

Sikirica s krumpirom

Sastojci:

300 g jari graha 
100 g tjestenine 
2 manja krumpira
1 režanj češnjaka
1 mrkva
3 žlice ulja
komadić korijena celera
nekoliko manjih rajčica ili 1 žlica koncentrata
lovor, timijan, peršin, ružmarin i slično
suhomesnati proizvodi po želji
sol, papar

Priprema:

Jari grah potopite u hladnu vodu i ostavite ga da se namače 12 sati pa promijenite vodu i isperite ga. Savjetuje se potopiti ga na dodatnih 12 sati. Ako ćete koristiti suho meso poput špic rebara, namočite i njega.

Kad je namakanje gotovo, još ga jednom isplahnite. Celer, mrkvu i češnjak krupno nasjeckajte, krumpir oljuštite i narežite na kockice. Ako koristite suho meso, stavite ga kuhati.

U loncu zagrijte 3 žlice ulja pa dodajte luk, češnjak, mrkvu i celer. Pirjajte ih uz miješanje oko dvije minute pa dodajte jari grah i krumpir te kratko pirjajte uz miješanje. Dodajte rajčice ili koncentrat, kratko pirjajte uz miješanje pa zalijte s oko pola litre zagrijane povrtne juhe ili tople vode.

Dodajte lovor i ružmarin, pokrijte i kuhajte oko dva sata na vrlo laganoj vatri. Nakon dva sata probajte jesu li mahunarke mekane i kuhane. U međuvremenu dolijevajte juhe ili vode po potrebi, a možete dodati i malo vode od kuhanja suhog mesa.

Kad je gotovo potpuno skuhano ubacite sol i papar te izvadite lovor i ružmarin. Želite li kremastiju juhu, dio usitnite u blenderu pa vratite u lonac. Dodajte tjesteninu i kuhajte dok nije gotova. Pred kraj dodajte i očišćeno suho meso, ako ga koristite. ako je pregusto, razrijedite toplom vodom.

Pospite timijanom ili peršinom i poslužite.
