Mnogi se vole hvaliti da znaju tajnu savršenog mesnog umaka, gulaša ili "mesa na bokune za polit‘ manistru", ali ako njihov savjet ne spominje detalj na koji ćemo vam upravo skrenuti pažnju, možete mu odmah uzvratiti da mu baš i nije neki. Savjet, a najvjerojatnije ni toć. Umak. Gulaš, zavisi o čemu pričate.

A o čemu god od navedenoga pričali, do najboljeg rezultata nećete doći ne budete li obratili pažnju na odabir pravog komada mesa. Najbolji gulaš, ali isto tako i toč za polit manistru ili njoke, što god vam bilo drago i pri ruci, priprema se s komadima na kojima ima dosta vezivnog tkiva i ponešto masnoće, jer upravo ti djelovi mesa tijekom kuhanja prelaze u šug koji meso održava sočnim i mekanim, ujedno zgušnjavajući jelo i obogaćujući mu okus.

Stoga čiste i posne komade mesa bez žilica, tetiva i opni čuvajte za druge načine pripreme, a sve ovo spomenuto slobodno ubacite u teću i dugo kuhajte na tihoj vatri, samo prije toga napravite jednu stvar, zahvaljujući kojoj će svi komadići mesa zadržati punoću okusa, umjesto da im sav gušt pobjegne u umak.

Prvi korak pripreme mesnih jela s umakom neka vam uvijek bude kratko pečenje na jakoj vatri. To je najbolje obaviti u serijama, jer ako ubacite svo meso odjednom, jako ćete sniziti temperaturu, a ni s mesom nećete moći dobro baratati, odnosno neće sve strane biti dovoljno dugo i intenzivno izložene visokoj temperaturi. A to je potrebno kako bi se na površini mesa, zahvaljujući Maillardovoj reakciji stvorila smećkasta karamelizirana korica, koja također obogaćuje okus jela, ali također čuva mesne sokove.

Mnogi se vole hvaliti da znaju tajnu savršenog mesnog umaka, gulaša ili "mesa na bokune za polit‘ manistru", ali ako njihov savjet ne spominje detalj na koji ćemo vam upravo skrenuti pažnju, možete mu odmah uzvratiti da mu baš i nije neki. Savjet, a najvjerojatnije ni toć. Umak. Gulaš, zavisi o čemu pričate.

A o čemu god od navedenoga pričali, do najboljeg rezultata nećete doći ne budete li obratili pažnju na odabir pravog komada mesa. Najbolji gulaš, ali isto tako i toč za polit manistru ili njoke, što god vam bilo drago i pri ruci, priprema se s komadima na kojima ima dosta vezivnog tkiva i ponešto masnoće, jer upravo ti djelovi mesa tijekom kuhanja prelaze u šug koji meso održava sočnim i mekanim, ujedno zgušnjavajući jelo i obogaćujući mu okus.

Stoga čiste i posne komade mesa bez žilica, tetiva i opni čuvajte za druge načine pripreme, a sve ovo spomenuto slobodno ubacite u teću i dugo kuhajte na tihoj vatri, samo prije toga napravite jednu stvar, zahvaljujući kojoj će svi komadići mesa zadržati punoću okusa, umjesto da im sav gušt pobjegne u umak.

Prvi korak pripreme mesnih jela s umakom neka vam uvijek bude kratko pečenje na jakoj vatri. To je najbolje obaviti u serijama, jer ako ubacite svo meso odjednom, jako ćete sniziti temperaturu, a ni s mesom nećete moći dobro baratati, odnosno neće sve strane biti dovoljno dugo i intenzivno izložene visokoj temperaturi. A to je potrebno kako bi se na površini mesa, zahvaljujući Maillardovoj reakciji stvorila smećkasta karamelizirana korica, koja također obogaćuje okus jela, ali također čuva mesne sokove.

Mnogi se vole hvaliti da znaju tajnu savršenog mesnog umaka, gulaša ili "mesa na bokune za polit‘ manistru", ali ako njihov savjet ne spominje detalj na koji ćemo vam upravo skrenuti pažnju, možete mu odmah uzvratiti da mu baš i nije neki. Savjet, a najvjerojatnije ni toć. Umak. Gulaš, zavisi o čemu pričate.

A o čemu god od navedenoga pričali, do najboljeg rezultata nećete doći ne budete li obratili pažnju na odabir pravog komada mesa. Najbolji gulaš, ali isto tako i toč za polit manistru ili njoke, što god vam bilo drago i pri ruci, priprema se s komadima na kojima ima dosta vezivnog tkiva i ponešto masnoće, jer upravo ti djelovi mesa tijekom kuhanja prelaze u šug koji meso održava sočnim i mekanim, ujedno zgušnjavajući jelo i obogaćujući mu okus.

Stoga čiste i posne komade mesa bez žilica, tetiva i opni čuvajte za druge načine pripreme, a sve ovo spomenuto slobodno ubacite u teću i dugo kuhajte na tihoj vatri, samo prije toga napravite jednu stvar, zahvaljujući kojoj će svi komadići mesa zadržati punoću okusa, umjesto da im sav gušt pobjegne u umak.

Prvi korak pripreme mesnih jela s umakom neka vam uvijek bude kratko pečenje na jakoj vatri. To je najbolje obaviti u serijama, jer ako ubacite svo meso odjednom, jako ćete sniziti temperaturu, a ni s mesom nećete moći dobro baratati, odnosno neće sve strane biti dovoljno dugo i intenzivno izložene visokoj temperaturi. A to je potrebno kako bi se na površini mesa, zahvaljujući Maillardovoj reakciji stvorila smećkasta karamelizirana korica, koja također obogaćuje okus jela, ali također čuva mesne sokove.
