O sarmi  se može pričati danima, ali ovo je čuveni recept čuvenog kuhara Steve Karapndže, po kojem su sarmu kuhale i naše bake.


SASTOJCI:

 100 g RIŽE

1 glavica kapule (crvenog luka)

2 režnja češnjaka

malo soli i papra

1 žlica Vegete

malo ljute mljevene paprike

1 lovorov list

suha rebarca ili kobasice

1-2 žlice sitno sjeckane pancete (ako želite)

1 glavica kiselog kupusa (oko 1 kg)

500 g mljevenog miješanog mesa

2 žlice sitno nasjeckanog peršina

1 jaje
2 žlice koncentrata rajčice
 

Zaprška:
1 veća glavica kapule
1 žlica slatke mljevene paprike

1 režanj češnjaka

POSTUPAK:

Rižu skuhajte do pola, a u međuvremenu na malo ulja prodinstajte luk. Kad luk zastakli dodajte nasjeckani češnjak, a po želji možete dodati i malo pancete narezane na kockice.

Meso stavite u duboku posudu i dodajte peršin, rižu, jaje, sol i papar, povrće i malo ljute papričice, a kada ste dodali pirjani luk, smjesu dobro promiješajte. Nakon toga pripremiti kiseli kupus, odvojiti listove, odstraniti tvrde dijelove i dobro oprati, a dio, par listova, narezati na tanke rezance, prenosi Danas.

Listove kupusa puniti žlicom i urolati. Ponavljajte postupak dok ne potrošite svo meso. Zatim u lonac u kojem ćete kuhati sarmu stavite pola nasjeckanog kupusa i po njemu posložite sarme koje morate čvrsto slagati kako se ne bi raspale tijekom kuhanja. Na sarme stavite list lovora, rebarca ili suho meso, a zatim sve prekrijte ostatkom nasjeckanog kupusa. Zatim dodajte mljevenu papriku i sok od rajčice pa zalijte vodom da sve prekrije.

Kuhajte dva do tri sata uz povremeno dolijevanje vode po potrebi. Kada je sarma gotova, od navedenih sastojaka napravite umak tako što ćete na par kapi ulja popržiti luk, češnjak i crvenu papriku, sve sjediniti i dodati u tekućinu u kojoj su se sarme kuhale. Prelijte sarmu, pustite da se još malo prokuha i vaše jelo je gotovo.

Rižu skuhajte do pola, a u međuvremenu na malo ulja prodinstajte luk. Kad luk zastakli dodajte nasjeckani češnjak, a po želji možete dodati i malo pancete narezane na kockice.

Meso stavite u duboku posudu i dodajte peršin, rižu, jaje, sol i papar, povrće i malo ljute papričice, a kada ste dodali pirjani luk, smjesu dobro promiješajte. Nakon toga pripremiti kiseli kupus, odvojiti listove, odstraniti tvrde dijelove i dobro oprati, a dio, par listova, narezati na tanke rezance, prenosi Danas.

Listove kupusa puniti žlicom i urolati. Ponavljajte postupak dok ne potrošite svo meso. Zatim u lonac u kojem ćete kuhati sarmu stavite pola nasjeckanog kupusa i po njemu posložite sarme koje morate čvrsto slagati kako se ne bi raspale tijekom kuhanja. Na sarme stavite list lovora, rebarca ili suho meso, a zatim sve prekrijte ostatkom nasjeckanog kupusa. Zatim dodajte mljevenu papriku i sok od rajčice pa zalijte vodom da sve prekrije.

Kuhajte dva do tri sata uz povremeno dolijevanje vode po potrebi. Kada je sarma gotova, od navedenih sastojaka napravite umak tako što ćete na par kapi ulja popržiti luk, češnjak i crvenu papriku, sve sjediniti i dodati u tekućinu u kojoj su se sarme kuhale. Prelijte sarmu, pustite da se još malo prokuha i vaše jelo je gotovo.

Sarma po receptu najpopularnijeg jugoslavenskog kuhara: Stevo Karapandža stavlja sve ovo

O sarmi  se može pričati danima, ali ovo je čuveni recept čuvenog kuhara Steve Karapndže, po kojem su sarmu kuhale i naše bake.


SASTOJCI:

 100 g RIŽE

1 glavica kapule (crvenog luka)

2 režnja češnjaka

malo soli i papra

1 žlica Vegete

malo ljute mljevene paprike

1 lovorov list

suha rebarca ili kobasice

1-2 žlice sitno sjeckane pancete (ako želite)

1 glavica kiselog kupusa (oko 1 kg)

500 g mljevenog miješanog mesa

2 žlice sitno nasjeckanog peršina

1 jaje
2 žlice koncentrata rajčice
 

Zaprška:
1 veća glavica kapule
1 žlica slatke mljevene paprike

1 režanj češnjaka
