Ove male i slasne zalogajčiće, koji će vam poslužiti kao doručak i večera, pronašli smo u talijanskoj street kuharici, a u potrazi za dodatnom inspiracijom ni ovaj put nismo ostali razočarani!

Pancerote su tradicionalna i jedna od najstarije ulične hrane u Italiji, najpopularnije u Pugli. Prema predaji izumljene su u Salentu kad je pekar odlučio potrijebiti ostatke tijesta za kruh kako bi napravio male pržene pizze oblikovane u polukrug, sa središtem punim otopljene mozzarelle i rajčice.

Iako su započeli kao slana ulična hrana, s vremenom su se pancerote pojavile i u nekoliko slatkih verzija koje čine savršen međuobrok ili desert i čak kao tipična karnevalska poslastica. Osim džemova i čokoladnih krema, slatke pancerote često sadrže ovčju ricottu ili nadjev od kestena.

Mali zalogaji u obliku polumjeseca, punjeni mozzarellom, šunkom i pelatom jako podsjećaju na pizzu calzone, međutim ipak se razlikuju od popularne inačice pizze. Tijesto za pancerote je iznimno mekano, a s otopljenim sastojcima i pomno odabranim začinima jako ukusno!

Priprema je iznimno jednostavna. Potrebno je izmijesiti tijesto, pustiti ga da odstoji, oblikovati ga i napuniti nadjevom pa ispržiti u ulju. Najbolja stvar je što tijesto možete pripremiti i dan ranije. Pancerote će nestati u tren oka, a sigurno i jedan od dražih obroka cijele obitelji! 

Panzerotti

Sastojci:

650 g glatkog brašna
200 ml mlijeka
200 ml vode
1 žlica šećera
7 g kvasca
1 žlica soli
50 ml ulja

Nadjev:

250 mozzarelle
100 g tvrdog sira
350 g pelati od rajčice
150 g šunke
bosiljak
sol

Priprema:

U malo većoj posudi pomiješajte toplo mlijeko i toplu vodu. Zatim dodajte šećer i kvasac, promiješajte, dodajte ulje i malo brašna pa opet sve izmiješajte dok se ne spoje svi sastojci. 

Postepeno dodajite brašno, neprestano miješajući pa umijesite tijesto. Dodatno ga nauljite pa još malo izmijesite na stolu. Tijesto podijelite u onoliko dijelova koliko panceroti želite napraviti.

Svaki komad tijesta oblikujte u lopticu, pospite je brašnom i stavite na brašnom posutu površinu da odstoji otprilike sat vremena. Ako želite ostaviti cijelo tijesto neka odstoji 3 sata.

Za to vrijeme pripremite nadjev. Isjeckajte sir, samlijte rajčice u pelati, dodajte začine i sve zajedno pomiješajte u posudi. 

Svaku lopticu tijesta razvucite rukom, ali pripazite da sredinu ostavite malo deblju, a krajeve tanje. Na sredinu tijesta stavite nadjev od sira, stavite šunku i mozzarellu, a krajeve podmažite vodom, preklopite i stisnite prstima da se dobro zalijepe.

Kad završite punjenje u dublju tavu ulijte ulje i zagrijte ga na najjačoj vatri, a prije nego što ćete krenuti raditi pancerote malo smanjite. 

Pancerote pržite u ulju otprilike jednu minutu sa sake strane. Ako volite pečenije možete i malo duže. Kad su gotove posložite ih na papirnate ručnike da upiju ostatak ulja. Poslužite ih tople i po želji s hladnim ili nekim drugim umakom.

Ove male i slasne zalogajčiće, koji će vam poslužiti kao doručak i večera, pronašli smo u talijanskoj street kuharici, a u potrazi za dodatnom inspiracijom ni ovaj put nismo ostali razočarani!

Pancerote su tradicionalna i jedna od najstarije ulične hrane u Italiji, najpopularnije u Pugli. Prema predaji izumljene su u Salentu kad je pekar odlučio potrijebiti ostatke tijesta za kruh kako bi napravio male pržene pizze oblikovane u polukrug, sa središtem punim otopljene mozzarelle i rajčice.

Iako su započeli kao slana ulična hrana, s vremenom su se pancerote pojavile i u nekoliko slatkih verzija koje čine savršen međuobrok ili desert i čak kao tipična karnevalska poslastica. Osim džemova i čokoladnih krema, slatke pancerote često sadrže ovčju ricottu ili nadjev od kestena.

Mali zalogaji u obliku polumjeseca, punjeni mozzarellom, šunkom i pelatom jako podsjećaju na pizzu calzone, međutim ipak se razlikuju od popularne inačice pizze. Tijesto za pancerote je iznimno mekano, a s otopljenim sastojcima i pomno odabranim začinima jako ukusno!

Priprema je iznimno jednostavna. Potrebno je izmijesiti tijesto, pustiti ga da odstoji, oblikovati ga i napuniti nadjevom pa ispržiti u ulju. Najbolja stvar je što tijesto možete pripremiti i dan ranije. Pancerote će nestati u tren oka, a sigurno i jedan od dražih obroka cijele obitelji! 

Panzerotti

Sastojci:

650 g glatkog brašna
200 ml mlijeka
200 ml vode
1 žlica šećera
7 g kvasca
1 žlica soli
50 ml ulja

Nadjev:

250 mozzarelle
100 g tvrdog sira
350 g pelati od rajčice
150 g šunke
bosiljak
sol

Priprema:

U malo većoj posudi pomiješajte toplo mlijeko i toplu vodu. Zatim dodajte šećer i kvasac, promiješajte, dodajte ulje i malo brašna pa opet sve izmiješajte dok se ne spoje svi sastojci. 

Postepeno dodajite brašno, neprestano miješajući pa umijesite tijesto. Dodatno ga nauljite pa još malo izmijesite na stolu. Tijesto podijelite u onoliko dijelova koliko panceroti želite napraviti.

Svaki komad tijesta oblikujte u lopticu, pospite je brašnom i stavite na brašnom posutu površinu da odstoji otprilike sat vremena. Ako želite ostaviti cijelo tijesto neka odstoji 3 sata.

Za to vrijeme pripremite nadjev. Isjeckajte sir, samlijte rajčice u pelati, dodajte začine i sve zajedno pomiješajte u posudi. 

Svaku lopticu tijesta razvucite rukom, ali pripazite da sredinu ostavite malo deblju, a krajeve tanje. Na sredinu tijesta stavite nadjev od sira, stavite šunku i mozzarellu, a krajeve podmažite vodom, preklopite i stisnite prstima da se dobro zalijepe.

Kad završite punjenje u dublju tavu ulijte ulje i zagrijte ga na najjačoj vatri, a prije nego što ćete krenuti raditi pancerote malo smanjite. 

Pancerote pržite u ulju otprilike jednu minutu sa sake strane. Ako volite pečenije možete i malo duže. Kad su gotove posložite ih na papirnate ručnike da upiju ostatak ulja. Poslužite ih tople i po želji s hladnim ili nekim drugim umakom.

Ove male i slasne zalogajčiće, koji će vam poslužiti kao doručak i večera, pronašli smo u talijanskoj street kuharici, a u potrazi za dodatnom inspiracijom ni ovaj put nismo ostali razočarani!

Pancerote su tradicionalna i jedna od najstarije ulične hrane u Italiji, najpopularnije u Pugli. Prema predaji izumljene su u Salentu kad je pekar odlučio potrijebiti ostatke tijesta za kruh kako bi napravio male pržene pizze oblikovane u polukrug, sa središtem punim otopljene mozzarelle i rajčice.

Iako su započeli kao slana ulična hrana, s vremenom su se pancerote pojavile i u nekoliko slatkih verzija koje čine savršen međuobrok ili desert i čak kao tipična karnevalska poslastica. Osim džemova i čokoladnih krema, slatke pancerote često sadrže ovčju ricottu ili nadjev od kestena.

Mali zalogaji u obliku polumjeseca, punjeni mozzarellom, šunkom i pelatom jako podsjećaju na pizzu calzone, međutim ipak se razlikuju od popularne inačice pizze. Tijesto za pancerote je iznimno mekano, a s otopljenim sastojcima i pomno odabranim začinima jako ukusno!

Priprema je iznimno jednostavna. Potrebno je izmijesiti tijesto, pustiti ga da odstoji, oblikovati ga i napuniti nadjevom pa ispržiti u ulju. Najbolja stvar je što tijesto možete pripremiti i dan ranije. Pancerote će nestati u tren oka, a sigurno i jedan od dražih obroka cijele obitelji! 

Panzerotti

Sastojci:

650 g glatkog brašna
200 ml mlijeka
200 ml vode
1 žlica šećera
7 g kvasca
1 žlica soli
50 ml ulja

Nadjev:

250 mozzarelle
100 g tvrdog sira
350 g pelati od rajčice
150 g šunke
bosiljak
sol

Priprema:

U malo većoj posudi pomiješajte toplo mlijeko i toplu vodu. Zatim dodajte šećer i kvasac, promiješajte, dodajte ulje i malo brašna pa opet sve izmiješajte dok se ne spoje svi sastojci. 

Postepeno dodajite brašno, neprestano miješajući pa umijesite tijesto. Dodatno ga nauljite pa još malo izmijesite na stolu. Tijesto podijelite u onoliko dijelova koliko panceroti želite napraviti.

Svaki komad tijesta oblikujte u lopticu, pospite je brašnom i stavite na brašnom posutu površinu da odstoji otprilike sat vremena. Ako želite ostaviti cijelo tijesto neka odstoji 3 sata.
