Kad se za nekoga kaže da ne zna ni kavu skuhat‘, sasvim je jasno što se želi poručiti: da dotični ili dotična, barem kad je o pripremi hrane riječ, nema pojma ni o čemu. No, ako ćemo pravo, skuhati stvarno dobru kavu uopće nije jednostavno. Oko te svakodnevne rabote postoji puno mitova i predrasuda, a postavite li u nekom društvu pitanje kako se točno kuha kava, čut ćete poprilično različite odgovore. U ovom slučaju nećemo uopće uzimati u obzir espresso, instant i filter kavu, tema nam je isključivo ono što većina nas naziva turskom kavom.

Prvo i osnovno, za dobru tursku kafu potrebna je kvalitetna mješavina, pa nemojte škrtariti i priuštite si što bolju. Ionako pripremom kave kod kuće znatno štedite već u samom startu.

Nadalje, pripazite da vam voda na početku ne proključa, nego kogomu ili džezvu, kako već zovete onu kruškoliku posudicu s dugom drškom, maknite s vatre čim je voda došla do točke tik pred vrenje. U tom trenutku jedan dio vode odlijte u šalicu, a ostatku dodajte po jednu vrhom punu žličicu kave za svaku šalicu kave. Neki tvrde da im je kava skuhana od samo jedne žličice po šalici "tanka" pa dodaju dvije, dok ima onih koji stavljaju tri jer vole, kako se kaže, da im "miš može pretrčati preko kave".

Kojom god "matematikom" se vodili, kad ste dodali kavu u vodu sve lijepo promiješajte, vratite kogomu na vatru i zatim pazite: čim se razina kave podigne, ugasite vatru, dodajte onaj dio vode koji ste prethodno odlili i pustite kavu da odstoji koji trenutak kako vam u šalicu ne bi ušlo previše "fundača".

I to vam je to, u grubim crtama, no naravno da ima još...

Neki tvrde kako kava, nakon što je jednom došla do vrenja, treba provriti još jednom. Neki tvrde da treba proključati ukupno tri puta. Drugi kažu da su to gluposti i da "serijsko" dovođenje kave do vrenja kvari okus.

A što je sa šećerom? Obično se dodajte jedna i pol do dvije žličice po šalici, no neki vole dodati i više. Takvi se obično pravdaju da im je život gorak pa im treba slatka kava. Bitno je samo dodati šećer u vodu odmah na početku, jer dodate li ga kad je kava već skuhana, morat ćete ga promiješati, uslijed čega će se s dna podići "fundač", a to vam može pokvariti užitak ispijanja.

Neki, pak, tvrde da je šećer prva stvar koju treba dodati u posudicu za kuhanje, zatim ide kava, a voda se, i to uzavrela, dodaje tek nakon što se smjesa šećera i kave zagrijala i šećer se počeo topiti. Navodno takav postupak vodi do kave punijeg okusa. Mi ga nismo isprobali pa nećemo komentirati.

Postoji još nekoliko "pravih" načina pripreme turske kave, no o tome nekom drugom prilikom.

Kad se za nekoga kaže da ne zna ni kavu skuhat‘, sasvim je jasno što se želi poručiti: da dotični ili dotična, barem kad je o pripremi hrane riječ, nema pojma ni o čemu. No, ako ćemo pravo, skuhati stvarno dobru kavu uopće nije jednostavno. Oko te svakodnevne rabote postoji puno mitova i predrasuda, a postavite li u nekom društvu pitanje kako se točno kuha kava, čut ćete poprilično različite odgovore. U ovom slučaju nećemo uopće uzimati u obzir espresso, instant i filter kavu, tema nam je isključivo ono što većina nas naziva turskom kavom.

Prvo i osnovno, za dobru tursku kafu potrebna je kvalitetna mješavina, pa nemojte škrtariti i priuštite si što bolju. Ionako pripremom kave kod kuće znatno štedite već u samom startu.

Nadalje, pripazite da vam voda na početku ne proključa, nego kogomu ili džezvu, kako već zovete onu kruškoliku posudicu s dugom drškom, maknite s vatre čim je voda došla do točke tik pred vrenje. U tom trenutku jedan dio vode odlijte u šalicu, a ostatku dodajte po jednu vrhom punu žličicu kave za svaku šalicu kave. Neki tvrde da im je kava skuhana od samo jedne žličice po šalici "tanka" pa dodaju dvije, dok ima onih koji stavljaju tri jer vole, kako se kaže, da im "miš može pretrčati preko kave".

Kojom god "matematikom" se vodili, kad ste dodali kavu u vodu sve lijepo promiješajte, vratite kogomu na vatru i zatim pazite: čim se razina kave podigne, ugasite vatru, dodajte onaj dio vode koji ste prethodno odlili i pustite kavu da odstoji koji trenutak kako vam u šalicu ne bi ušlo previše "fundača".

Neki tvrde kako kava, nakon što je jednom došla do vrenja, treba provriti još jednom. Neki tvrde da treba proključati ukupno tri puta. Drugi kažu da su to gluposti i da "serijsko" dovođenje kave do vrenja kvari okus.

A što je sa šećerom? Obično se dodajte jedna i pol do dvije žličice po šalici, no neki vole dodati i više. Takvi se obično pravdaju da im je život gorak pa im treba slatka kava. Bitno je samo dodati šećer u vodu odmah na početku, jer dodate li ga kad je kava već skuhana, morat ćete ga promiješati, uslijed čega će se s dna podići "fundač", a to vam može pokvariti užitak ispijanja.

Neki, pak, tvrde da je šećer prva stvar koju treba dodati u posudicu za kuhanje, zatim ide kava, a voda se, i to uzavrela, dodaje tek nakon što se smjesa šećera i kave zagrijala i šećer se počeo topiti. Navodno takav postupak vodi do kave punijeg okusa. Mi ga nismo isprobali pa nećemo komentirati.

Postoji još nekoliko "pravih" načina pripreme turske kave, no o tome nekom drugom prilikom.
