U kategoriju superhrane, odnosno namirnica koje imaju posebno blagotvorne učinke na zdravlje, spadaju najrazličitije i egzotične namirnice, ali i jednostavne, svakodnevne i tako česte u prehrani. Jedna od njih je grah. Prepun je vlakana koja štite srce. Također ima puno proteina - pola šalice graha ima jednaku količinu proteina kao i 300 grama mesa, prema podacima American Diabetes Associationa. Uz proteine i složene ugljikohidrate grah sadrži važne vitamine i minerale kao što su folna kiselina, mangan, kalij, željezo, fosfor, bakar i magnezij. Proteini u grahu pomažu mišićima u našem tijelu, a složeni ugljikohidrati pružaju stalni izvor energije. Između bijelog i ostalih vrsta graha, birajte ostale vrste jer sadrže antioksidanse i izoflavone koji su moćan spoj koji sprečava nekoliko vrsta raka, u prvom redu debelog crijeva, smanjuje rizik od srčanih bolesti, poboljšava čvrstoću kostiju i zdravlje prostate, a olakšava i simptome menopauze, piše Živim.

Namakanje prije kuhanja

Iako se o grahu pisalo i u najstarijim pronađenim zapisima, drevni Egipćani sadili su ga još prije Tutankamona, a jeli su ga drevni Grci u Europi i Indijanci u Americi, posljednjih godina pažnju znanstvenika privlači crni grah. Naime, smatra se da uspješno prevenira rak debelog crijeva tako što održava zdrav probavni sustav. Pun je hranjivih tvari kao što je mineral molibden, koji sudjeluje u metabolizmu, te vitamina B9 i B1, vlakana, triptofana (esencijalna aminokiselina u ljudskoj prehrani), mangana, proteina, magnezija, fosfora i željeza. Neki podaci kažu i da crni grah (i općenito grah) može smanjiti rizik od srčanih bolesti za čak 82 posto. Grah, ali i ostale mahunarke, omiljeno su jelo vegetarijanaca i vegana jer nadoknađuju nedostatak bjelančevina u prehrani, a često se pripremaju u kombinaciji sa žitaricama. Grah valja namakati prije kuhanja jer će biti lakše probavljiv. Nije preporučljivo jesti sirov (kao ni bob) jer neke vrste graha mogu sadržavati toksične tvari koje se uništavaju termičkom obradom, i to već nakon deset minuta. Većina mahunarki kuha se dulje.

Zašto imamo plinove nakon graha

U grahu se nalaze i vlakna - oligosaharidi, koja se sastoje od tri do pet molekula šećera povezanih tako da ih tijelo ne može probaviti ili apsorbirati. Oligosaharide naše tijelo samo ne može rastvoriti, ali zato mogu bakterije koje žive u crijevima i upravo one prilikom toga proizvode metan kojeg se tijelo samo oslobađa. Pomoći si možete ako grah dobro isperete, namočite večer prije kuhanja, mijenjate vodu u kojoj se kuha te dodate kombu alge, kim, anis i komorač. Sve to može smanjiti nadimanje nakon konzumiranja mahunarki, piše Živim.

Uz proteine i složene ugljikohidrate grah sadrži važne vitamine i minerale kao što su folna kiselina, mangan, kalij, željezo, fosfor, bakar i magnezij. Namakanje prije kuhanja

Iako se o grahu pisalo i u najstarijim pronađenim zapisima, drevni Egipćani sadili su ga još prije Tutankamona, a jeli su ga drevni Grci u Europi i Indijanci u Americi, posljednjih godina pažnju znanstvenika privlači crni grah. Naime, smatra se da uspješno prevenira rak debelog crijeva tako što održava zdrav probavni sustav. Pun je hranjivih tvari kao što je mineral molibden, koji sudjeluje u metabolizmu, te vitamina B9 i B1, vlakana, triptofana (esencijalna aminokiselina u ljudskoj prehrani), mangana, proteina, magnezija, fosfora i željeza. Neki podaci kažu i da crni grah (i općenito grah) može smanjiti rizik od srčanih bolesti za čak 82 posto. Grah, ali i ostale mahunarke, omiljeno su jelo vegetarijanaca i vegana jer nadoknađuju nedostatak bjelančevina u prehrani, a često se pripremaju u kombinaciji sa žitaricama. Grah valja namakati prije kuhanja jer će biti lakše probavljiv. Nije preporučljivo jesti sirov (kao ni bob) jer neke vrste graha mogu sadržavati toksične tvari koje se uništavaju termičkom obradom, i to već nakon deset minuta. Većina mahunarki kuha se dulje.

Zašto imamo plinove nakon graha

U grahu se nalaze i vlakna - oligosaharidi, koja se sastoje od tri do pet molekula šećera povezanih tako da ih tijelo ne može probaviti ili apsorbirati. Oligosaharide naše tijelo samo ne može rastvoriti, ali zato mogu bakterije koje žive u crijevima i upravo one prilikom toga proizvode metan kojeg se tijelo samo oslobađa. Pomoći si možete ako grah dobro isperete, namočite večer prije kuhanja, mijenjate vodu u kojoj se kuha te dodate kombu alge, kim, anis i komorač. Sve to može smanjiti nadimanje nakon konzumiranja mahunarki, piše Živim.
