Zanimljivo je kako jedno jelo od samo tri glavna sastojka - u ovom slučaju to su meso, kiseli kupus i riža - može imati toliko varijacija kao sarme. Svatko mu je dodao svoj osobni potpis, baš po svome okusu, pa netko stavi manje ovog, više onog, neke sastojke termički obradi prije nego ih pomiješa s drugima, netko doda i neki svoj tajni sastojak s kojim želi postići neki poseban efekt... Sve u svemu, mjogli bismo reći koliko kužina, toliko recepata za sarme.
U svom tom mnoštvu jedan recept još uvijek glasi za najbolji, a to je recept slavnog kuhara Steve Karapandže čija se emisija o kuhanju nekoć gledala gotovo pobožnom pozornošću. Pronašli smo recept za sarme koji se pripisuje baš njemu, navodno ga je dao u jednoj od epizoda svog kultnog showa. Možda i nije. Ali tko ga je probao kaže da je savršen.
Sarme
Sastojci:
oko 1,5 kg miješanog mljevenog mesa (junetina i svinjetina od vrata)
1 glavica kiselog kupusa
suha rebra ili kobasice
100 g riže
1 glavica luka
2 režnja češnjaka
1-2 žlice sitno sjeckane slanine
2 žlice sitno sjeckanog peršina
1 jaje
1 žlica povrtnog začina
malo ljute mljevene paprike
1 lovorov list
1 žlica slatke mljevene paprike
2 žlica koncentrata rajčice
voda ili mesni temeljac
sol, papar
Za zapršku:
malo ulja
1 veća glavica luka
1 režanj češnjaka
1 žličica crvene slatke paprike
Priprema:
Pripremite kiseli kupus: odvojite listove, odstranite tvrde dijelove i dobro properite, a dio nasjeckajte na tanke rezance.
Skuhajte rižu do pola.
Na malo ulja prodinstajte luk, kad porumeni ubacite usitnjeni češnjak, promiješajte dok ne zamiriše pa sklonite s vatre.
Meso stavite u duboku posudu, dodajte mu peršin, nasjeckanu slaninu, napola skuhanu rižu, jaje, sol, papar, suhi povrtni začin, malo ljute paprike i dinstani luk. Dobro promiješajte.
Listove kupusa punite smjesom mesa i riže sve dok je ne potrošite, zatim u lonac u kojem ćete kuhati sarmu ubacite pola količine nasjeckanog kupusa i na njega složite sarme. Na vrh ubacite lovorov list i suho meso, pokrijte sve ostatkom usitnjenog kupusa, dodajte malo mljevene paprike i koncentrat rajčice pa zalijte vodom ili temeljcem da sve pokrije.
Kuhajte dva do tri sata dolijevajući vodu po potrebi.
Kad su sarme skoro skuhane, zapržite nasjeckani luk i češnjak, dodajte im slatku papriku pa promiješajte. Ubacite u sarme i pustite da prokuha još koju minutu da se okusi prožmu.

Zanimljivo je kako jedno jelo od samo tri glavna sastojka - u ovom slučaju to su meso, kiseli kupus i riža - može imati toliko varijacija kao sarme. Svatko mu je dodao svoj osobni potpis, baš po svome okusu, pa netko stavi manje ovog, više onog, neke sastojke termički obradi prije nego ih pomiješa s drugima, netko doda i neki svoj tajni sastojak s kojim želi postići neki poseban efekt... Sve u svemu, mjogli bismo reći koliko kužina, toliko recepata za sarme.
U svom tom mnoštvu jedan recept još uvijek glasi za najbolji, a to je recept slavnog kuhara Steve Karapandže čija se emisija o kuhanju nekoć gledala gotovo pobožnom pozornošću. Pronašli smo recept za sarme koji se pripisuje baš njemu, navodno ga je dao u jednoj od epizoda svog kultnog showa. Možda i nije. Ali tko ga je probao kaže da je savršen.
Sarme
Sastojci:
oko 1,5 kg miješanog mljevenog mesa (junetina i svinjetina od vrata)
1 glavica kiselog kupusa
suha rebra ili kobasice
100 g riže
1 glavica luka
2 režnja češnjaka
1-2 žlice sitno sjeckane slanine
2 žlice sitno sjeckanog peršina
1 jaje
1 žlica povrtnog začina
malo ljute mljevene paprike
1 lovorov list
1 žlica slatke mljevene paprike
2 žlica koncentrata rajčice
voda ili mesni temeljac
sol, papar
Za zapršku:
malo ulja
1 veća glavica luka
1 režanj češnjaka
1 žličica crvene slatke paprike
Priprema:
Pripremite kiseli kupus: odvojite listove, odstranite tvrde dijelove i dobro properite, a dio nasjeckajte na tanke rezance.
Skuhajte rižu do pola.
Na malo ulja prodinstajte luk, kad porumeni ubacite usitnjeni češnjak, promiješajte dok ne zamiriše pa sklonite s vatre.
Meso stavite u duboku posudu, dodajte mu peršin, nasjeckanu slaninu, napola skuhanu rižu, jaje, sol, papar, suhi povrtni začin, malo ljute paprike i dinstani luk. Dobro promiješajte.
Listove kupusa punite smjesom mesa i riže sve dok je ne potrošite, zatim u lonac u kojem ćete kuhati sarmu ubacite pola količine nasjeckanog kupusa i na njega složite sarme. Na vrh ubacite lovorov list i suho meso, pokrijte sve ostatkom usitnjenog kupusa, dodajte malo mljevene paprike i koncentrat rajčice pa zalijte vodom ili temeljcem da sve pokrije.
Kuhajte dva do tri sata dolijevajući vodu po potrebi.
Kad su sarme skoro skuhane, zapržite nasjeckani luk i češnjak, dodajte im slatku papriku pa promiješajte. Ubacite u sarme i pustite da prokuha još koju minutu da se okusi prožmu.
