Ako ste se danas s Peškarije vratili s lijepim cipljima oštricama koje su mandalinski ribari jutros ulovili u Prukljanu, probajte ih pripremiti onako kako mi je jednom prišapnuo pokojni Pere Dulibić Puće, vrsni udičar iz Doca. To je jedna varijanta popare bez krumpira; mi bismo u Šibeniku rekli „u tisno”, hoće reći bez puno „čorbe”. Često se radi i od raže.

Dakle, dobri se ciplji oštrice ili zlatari – kao najukusniji od pet-šest jadranskih vrsta – dobro očiste, naročito pazeći da im se iz droba odstrani crna opna gorkoga okusa. Najbolje to ide trljajući prstima pod blagim mlazom vode ili u plićaku, tko ima privilegiju očistiti ribu u moru.

Riba se potom ostavi malo ocijediti, a dotle se u ovećoj teći dobroga dna – da ne zagara - na prst maslinova ulja malo poduši dobra kapula izrezana na kolute. Kada omekša, na tu se postelju od kapule poredaju ciplji, kao na gradele. Potom se zaliju dobrim bijelim vinom, prst dva iznad ribe, posole i dobro popapre, te kuhaju na jačoj vatri dok alkohol ne ishlapi. Ubace se i češalj-dva bijeloga luka – ne više od toga - prethodno pritisnuti kuhinjskim nožem, da se raspuknu, a dobro je došao i list lovora. Kvasina nije potrebna, jer je bijelo vino dovoljno kiselo, no tko hoće, može radi arome dodati žličicu dvije. Skine se s vatre kada riblje oči izvale bjeline, pospe svježim petrusimenom, pusti da se okusi „štanjaju” desetak minuta i uslast blaguje.

Ako ste se danas s Peškarije vratili s lijepim cipljima oštricama koje su mandalinski ribari jutros ulovili u Prukljanu, probajte ih pripremiti onako kako mi je jednom prišapnuo pokojni Pere Dulibić Puće, vrsni udičar iz Doca. To je jedna varijanta popare bez krumpira; mi bismo u Šibeniku rekli „u tisno”, hoće reći bez puno „čorbe”. Često se radi i od raže.

Dakle, dobri se ciplji oštrice ili zlatari – kao najukusniji od pet-šest jadranskih vrsta – dobro očiste, naročito pazeći da im se iz droba odstrani crna opna gorkoga okusa. Najbolje to ide trljajući prstima pod blagim mlazom vode ili u plićaku, tko ima privilegiju očistiti ribu u moru.

Riba se potom ostavi malo ocijediti, a dotle se u ovećoj teći dobroga dna – da ne zagara - na prst maslinova ulja malo poduši dobra kapula izrezana na kolute. Kada omekša, na tu se postelju od kapule poredaju ciplji, kao na gradele. Potom se zaliju dobrim bijelim vinom, prst dva iznad ribe, posole i dobro popapre, te kuhaju na jačoj vatri dok alkohol ne ishlapi. Ubace se i češalj-dva bijeloga luka – ne više od toga - prethodno pritisnuti kuhinjskim nožem, da se raspuknu, a dobro je došao i list lovora. Kvasina nije potrebna, jer je bijelo vino dovoljno kiselo, no tko hoće, može radi arome dodati žličicu dvije. Skine se s vatre kada riblje oči izvale bjeline, pospe svježim petrusimenom, pusti da se okusi „štanjaju” desetak minuta i uslast blaguje.

Probajte pripremiti ciplje na način kako ih je kuhao pokojni Šibenčanin, poznati Dolačanin i vrstan udičar

Ako ste se danas s Peškarije vratili s lijepim cipljima oštricama koje su mandalinski ribari jutros ulovili u Prukljanu, probajte ih pripremiti onako kako mi je jednom prišapnuo pokojni Pere Dulibić Puće, vrsni udičar iz Doca. To je jedna varijanta popare bez krumpira; mi bismo u Šibeniku rekli „u tisno”, hoće reći bez puno „čorbe”. Često se radi i od raže.

Dakle, dobri se ciplji oštrice ili zlatari – kao najukusniji od pet-šest jadranskih vrsta – dobro očiste, naročito pazeći da im se iz droba odstrani crna opna gorkoga okusa. Najbolje to ide trljajući prstima pod blagim mlazom vode ili u plićaku, tko ima privilegiju očistiti ribu u moru.

Riba se potom ostavi malo ocijediti, a dotle se u ovećoj teći dobroga dna – da ne zagara - na prst maslinova ulja malo poduši dobra kapula izrezana na kolute. Kada omekša, na tu se postelju od kapule poredaju ciplji, kao na gradele. Potom se zaliju dobrim bijelim vinom, prst dva iznad ribe, posole i dobro popapre, te kuhaju na jačoj vatri dok alkohol ne ishlapi. Ubace se i češalj-dva bijeloga luka – ne više od toga - prethodno pritisnuti kuhinjskim nožem, da se raspuknu, a dobro je došao i list lovora. Kvasina nije potrebna, jer je bijelo vino dovoljno kiselo, no tko hoće, može radi arome dodati žličicu dvije. Skine se s vatre kada riblje oči izvale bjeline, pospe svježim petrusimenom, pusti da se okusi „štanjaju” desetak minuta i uslast blaguje.
