Glavna disciplina ovih dana u domaćinstvima je penganje jaja. Imate osjećaj da se u trgovinama samo jaja prodaju. Koliko brzo dođu na police, još brže nestanu. Iako, reći će upućeniji, kokoši baš u ovo preduskrsno vrijeme nesu najviše jaja, ipak kao da su koke ubacile u petu brzinu?! Kako u ‘poplavi‘ jaja znati prepoznati da jaje koje smo kupili nije mućak, pitali smo sugrađanina Boža Musladina koji na svom domaćinstvu drži stotinjak kokoši:

- Za kontrolu zdravog jaja je najidealnije u lonac ili teću ulit hladnu vodu i lagano potopit jaja, samo treba paziti da ne tuknete s njima o dno. Svako jaje koje se digne prema površini, neka čak i isplivaju na površinu, nemojte koristit, bacite ga, to nije za upotrebu, to je staro ko zna koliko! Zračni jastuk u jaju se povećava kako jaje stari, zato isplutava na površinu – pojašnjava gospar Božo.

Treba li jaje protresti kraj uha, pa ako se iznutra čuje ‘plesanje‘ žumanjka to jaje baciti, kaže, kako to ne bi trebao biti način testiranja svježine jaja. Doduše uvijek nam ostaje test golim okom – ako je žumanjak u obliku polovice lopte a oko njega bjelanjak čvrst, a ne vodenast, to jaje bi trebalo biti svježe.

Budući da kod izrade pisanica jaja treba (s)kuhati, zanimalo nas je i kojim trikovima pribjeći kako bi izbjegli pucanje kore na jajima?

- Jaja treba stavit u hladnu vodu ne vrelu i ne smiju se kuhati na jakoj vatri, to je jedini recept kako izbjeći pucanje jaja. Sol se dok se kuhaju isključivo stavlja da bi se poslije mogli lakše oguliti. Ali ima jedna fora što se tiče guljenja jaja, kad su jaja freška, jedan do pet dana stara, ona će se jako teško guliti. Svako jaje staro preko pet dana će se lagano guliti. Znate zašto, dok jaje ne stvori zračni jastuk na vrhu, na onom tupom dijelu, ono se teže guli. Kad se stvori taj zračni jastuk i širi se on pomaže za guljenje. Ima još jedan trik za lakše guljenje jaja, otvori se vrh i dno i puhne se lagano pod koru i lakše se oguli – kaže gospar Božo i dodaje kako je za pengana jaja jako bitna debljina kore, ‘kad mlada pilica snese obično budu jaja najčvršće kore‘. Naravno, vanjski uzgoj je bitan jer i način uzgoja utiče na tvrdoću kore. Jaja iz takvog uzgoja su također čvršće kore.

Kažu upućeniji da bi bilo dobro jaja iz hladnjaka izvaditi barem sat prije nego ih namjeravamo staviti kuhati, kako bi postigla sobnu temperaturu, što bi valjda trebalo pripomoći kori da ne popuca.

Glavna disciplina ovih dana u domaćinstvima je penganje jaja. Imate osjećaj da se u trgovinama samo jaja prodaju. Koliko brzo dođu na police, još brže nestanu. Iako, reći će upućeniji, kokoši baš u ovo preduskrsno vrijeme nesu najviše jaja, ipak kao da su koke ubacile u petu brzinu?! Kako u ‘poplavi‘ jaja znati prepoznati da jaje koje smo kupili nije mućak, pitali smo sugrađanina Boža Musladina koji na svom domaćinstvu drži stotinjak kokoši:

- Za kontrolu zdravog jaja je najidealnije u lonac ili teću ulit hladnu vodu i lagano potopit jaja, samo treba paziti da ne tuknete s njima o dno. Svako jaje koje se digne prema površini, neka čak i isplivaju na površinu, nemojte koristit, bacite ga, to nije za upotrebu, to je staro ko zna koliko! Zračni jastuk u jaju se povećava kako jaje stari, zato isplutava na površinu – pojašnjava gospar Božo.

Treba li jaje protresti kraj uha, pa ako se iznutra čuje ‘plesanje‘ žumanjka to jaje baciti, kaže, kako to ne bi trebao biti način testiranja svježine jaja. Doduše uvijek nam ostaje test golim okom – ako je žumanjak u obliku polovice lopte a oko njega bjelanjak čvrst, a ne vodenast, to jaje bi trebalo biti svježe.

Budući da kod izrade pisanica jaja treba (s)kuhati, zanimalo nas je i kojim trikovima pribjeći kako bi izbjegli pucanje kore na jajima?

- Jaja treba stavit u hladnu vodu ne vrelu i ne smiju se kuhati na jakoj vatri, to je jedini recept kako izbjeći pucanje jaja. Sol se dok se kuhaju isključivo stavlja da bi se poslije mogli lakše oguliti. Ali ima jedna fora što se tiče guljenja jaja, kad su jaja freška, jedan do pet dana stara, ona će se jako teško guliti. Svako jaje staro preko pet dana će se lagano guliti. Znate zašto, dok jaje ne stvori zračni jastuk na vrhu, na onom tupom dijelu, ono se teže guli. Kad se stvori taj zračni jastuk i širi se on pomaže za guljenje. Ima još jedan trik za lakše guljenje jaja, otvori se vrh i dno i puhne se lagano pod koru i lakše se oguli – kaže gospar Božo i dodaje kako je za pengana jaja jako bitna debljina kore, ‘kad mlada pilica snese obično budu jaja najčvršće kore‘. Naravno, vanjski uzgoj je bitan jer i način uzgoja utiče na tvrdoću kore. Jaja iz takvog uzgoja su također čvršće kore.

Kažu upućeniji da bi bilo dobro jaja iz hladnjaka izvaditi barem sat prije nego ih namjeravamo staviti kuhati, kako bi postigla sobnu temperaturu, što bi valjda trebalo pripomoći kori da ne popuca.
